What's a flawless book on surgical technique (general surgery)?

Assuming I already have anatomy background, what's a good book on surgical technique for general surgery? eg. how do you do open hernia repair, appendicectomy, splenectomy, cholecystectomy, gastrectomy etc. (just common and important techniques, and spell it out exactly how to go about doing it resembling a cook book or woodwork/lego model instruction manual). Preferably something that is readable, easy to access, easy to get the message and follow not too over the board but not too simplistic either. Thanks a lot.
