You operate as much or as little as you want. If you only want to work 3 days a week, you can do that. I know orthopedic surgeons don't usually enjoy to come in late at night unless they're subdivision of a trauma center. Most broken bones can wait until the next morning.
your life style has nothing to do near what you do for a living. one is a job where you make money to allow you to live your own life span style. your life style is personal choice. what you do for a living may be by choice but quite often you are stuck beside it once you get going. you can always change your life span style. and of course your life style will change as you age, or bring back married, or get divorced, or have children, etc ...

As a nurse, I feel the surgeons beside the best lifestyles are orthopedic surgeons. Most orthopedic surgeries are elective and, thus; they are not called into the hospital for an emergency.
Most surgeons don't really have time for luxurious lifestyles. I would say that cosmetic surgeons hold more comfortable/less hectic lifestyles, though.
