Why do they collect blood sample for a diet study?

I'm currently enrolled in a study in which we enjoy to drink soy milk for three months (to see its effect on the intestinal micro biota). Ever month, we have to give a blood sample. Why is this? What does the blood taster actually show about our diet?

Blood samples show various things give or take a few your nutrition and blood sugars. Studies on albumin and prealbumin show whether or not you are well nourished or not. Your liver makes albumin as a free floating protein to create oncotic pressure surrounded by your vasculature, and needs other types of proteins to make it. This is tested in the blood. Hemoglobin A1C test show how high your blood sugars have been over days gone by 3 months, which can show whether or not you are diabetic, or how well your glycemic load has be handled. If the soy milk does and good or any harm, it will FIRST show up contained by your body chemistry -- measurable through blood samples.

Any change in your kidneys or liver functions will show up almost directly, and is usually a sign that you would need to stop participating early.

i would assume that they are also checking for things like change in cholesterol and blood sugar, too.

Every year when I go for my twelve-monthly exam, the doc takes a blood sample..checking for various things contained by the blood that are related to good heath (she could even tell from my blood that I smoked, and I individual do it occasionally).
