It's an interesting conception, and as far as medical instruments go, ECG/EKG one of the oldest, so making a DIY system is quite reasonable and practical. One item to watch out for though is safety - yes, the chance of getting hurt is extremely low, but when you hook someone up to something that is to say not electrically isolated from ground or the mains power source (such as the computer you would be using to record the data), you run the risk of injury in the off-chance that something go wrong. Medical equipment is always powered with isolation transformers (or batteries), and undergo exhaustive conducting tests to find as many points of dangerous failure as possible (which is to a certain extent why they are so expensive).
