Why do anesthesiologists specify no food or wet after midnight on the dark prior to surgery instead of XX?

Why is it that prior to a surgery, the anesthesiologist will specify nothing by mouth (food or water) after midnight of the night up to that time the surgery. And, it does not matter what time of the day the surgery will start. It's still nothing after midnight, whether the surgery starts at 7am or at 4pm.
Why is midnight such an esteemed cut-off time, instead of XX hours prior to the surgery?
(I should know about the 4pm, I once had surgery scheduled for that time and I be still told no food or water (npo) after midnight

If you are a night owl, you can talk to your surgeon and it may be used to accordingly. Midnight is the cutoff based on surgeries that are scheduled first entity in the morning, but if yours is not scheduled until late afternoon, you can usually own it changed. It must be done through your doctor if you are hospitalized the night before, since the nurses have to follow the doctor's information. 3. Stomach emptying can be delayed by stress, and many people are bashful prior to surgery, so normal emptying times can be prolonged > 8 hrs.
4. Some conditions require longer NPO times - diabetics, those with prior stomach surgery, hiatal hernias, etc. can hold delayed gastric emptying.
Some facilities have other rules, approaching no solids after midnight, and clear liquids up to 3 hours before surgery. Great, if the schedule is set surrounded by stone, nobody cancels and everyone can follow the (simple) instructions.

When they knock you out, often they own to put a tube in your throat so you can breath artificially and, depending on the surgery, in the stomach.
If you have food or juice in there during the surgery, you could choke to death or complicate surgery.
