Would taking Ambien next to food fashion it mimic Ambien CR (the extended release version)?

I have more trouble staying asleep than I do falling asleep. Ambien CR is extended release, so it's geared towards staying asleep. However, I'm paying out of pocket, and there isn't a generic version of the CR. My doctor say it's up to me to decide which one I want to get prescribed.

So, can I get the generic regular Ambien and a short time ago take it with food to make it achievement somewhat like the extended release version?

Correct, it is the way the tablet is made i.e. responsible for the controlled release. On a side note, very few people find plain ambien to be unsatisfactory for keeping them asleep. You would probably do best trying the plain ambien first, and if you are one of the few patients who cannot stay asleep with the med, you could move to the CR Source(s): PharmD
Unfortunately, it won't make any difference. A drug that is formulated to work a convinced way will only work that way. Having food surrounded by your stomach will not change the chemical breakdown of the drug.
