Why do biochemists grind up cell to study them?

The reason is in actual fact simple and I hope not to insult your intelligence:

Biochemists study the chemistry INSIDE cells.
Cell biologists- study cells in common.

Certainly live cells are interesting subjects of examination, unfortunately for biochemists, that darn plasma membrane get in the way. As a result, we have to grind, or run cell through a homogenizer to get to the good stuff inside. However, even at this point, we have to run the contents of such technique through several rounds of centrifugation at high speeds to get to the soluble proteins that is the stuff of biochemistry.
